Beef Vegetable Soup
2 large cans petite diced tomatoes (preferably Redpack or Organic varieties)
1 large yellow onion
3 green bell peppers
2 heaping tablespoons minced garlic
2 bay leaves
¼ cup red/red cooking wine
½ box organic boxed beef broth
1 lb. lean ground beef
1 lb. stew beef
3 stalks celery
1 dash black pepper (to taste)
*Cook ground beef in a frying pan. Drain fat before putting in crockpot.
*Sear outside of stew beef in frying pan, and transfer all meat/juices to the crockpot.
*Add the diced tomatoes/liquid to the crockpot.
*Chop up all of the veggies and add the rest of the above ingredients to crockpot.
*Cook on high for 5-6 hours, stirring veggies through occasionally so that they cook completely.
